Over the years Keiran became more and more aware that A LOT of his customers were actually Shire residents most of which were making regular trips to his Peakhurst and Bondi locations on weekends, and even during the week.

Aside from bread and cakes, Kieran also offers a taste of French artisan pastry to the people of Sutherland Shire. Their viennoiserie is made with an emphasis on artisanal. Each product uses premium ingredients to give it its distinctive flavour, with butter of course, being the star ingredient.
Baked By Keiran use traditional French bread-making methods focusing on layering butter into their dough to create what is known as lamination, which adds quality and refinement to their products.
Viennoiserie is a French term for sweet and savoury pastries made using viennoiserie dough. It is commonly used in the regions of France where it originated.
Historically, viennoiseries were sold on the streets of markets and by itinerant pastry makers who would travel from town to town selling their goods. Today, many traditional viennoiserie shops can still be found around France in Paris, Lyon, and Strasbourg.
